This page is maintained by Dr. Byron Chaves. Dr. Chaves is an assistant professor of applied food microbiology and food safety extension specialist in the department of food science and technology at the University of Nebraska-Lincoln. Dr. Chaves works closely with the Nebraska and regional food industry providing training and technical assistance in good manufacturing practices, sanitation, HACCP, FSMA regulations, environmental monitoring, hazard analysis and food safety validations. Dr. Chaves is a lead instructor for FSMA Preventive Controls for Human Foods, FSMA Foreign Supplier Verification Programs, and the International HACCP Alliance. He received his PhD in Food Safety Microbiology from Texas Tech University, a master's of food science/experimental statistics from Clemson University, and bachelor's degree in food technology from the University of Costa Rica.
